Episode 8 Recipes for Fun Fresh Snacks






Purple Quinoa Patties

Ingredients: 



  • 1 1/2 C. Rainbow quinoa (cooked)
  • 1 medium purple potato 
  • 1-2 Tbsp dehydrated Kale
  • 1 Tbsp green onions
  • 1 egg
  • 1 Tbsp garlic avocado oil (or olive oil)
  • 2 Tbsp Crispy Sunflower seeds*
  • Salt + Pepper (to taste)
  • Duration: 45-50 min
  • Yield: 10-12  - 2” patties


Directions:



  1. Preheat oven to 350oF. While oven is preheating, steam purple potato into a mushy consistency (~15-20 min medium heat), smash in a large mixing bowl. 
  2. Meanwhile, beat egg in a small bowl with a whisk. Add salt, pepper and dehydrated kale and mix well. Chop green onions.
  3. Add all the ingredients (egg mixture, quinoa, chopped onion, sunflower seeds, and oil) to the potato and combine into a uniform mix.
  4. Line a tray with parchment paper and place 2x2” patties. Lower over temperature to 250oF and bake patties for 20 minutes. 
  5. Remove patties from oven, flip them and bake for an extra 6-8 minutes or until desired crispness.
  6. Enjoy them warm or cold. As sliders or accompanied with your favorite dip!

To Freeze: 

Place cooked patties on a cookie sheet and freeze. Once they are frozen, place patties in a freezer safe container and date.  They will be good for about 3 months. 
To Reheat: 
Preheat oven to 325 degrees.  Place frozen patties on a lightly greased pan (I use Ghee) and bake for 15-20 minutes, flip patties over and bake 5 more minutes.

*Soaked in a warm Salt Brine and dehydrated (or cooked on your ovens lowest setting)



Muhammara

Portion Size: 1/4th Cup
Servings: 6


Ingredients: 

  • 2 C crispy walnuts*
  • 1/2 C Pepper paste Sera
  • 3 T Lemon
  • 2-3 T Olive oil
  • Salt to taste


Directions:



  1. In the food processor, chop Walnuts (do not over process or you get walnut butter). 
  2. Add pepper paste and blend.  
  3. Add lemon. 
  4. From this point add olive oil as needed to help blend pepper and walnuts and achieve desired consistency. 

*Soaked for 12 hours in warm water with 1 tsp Himalayan pink sea salt and dehydrated 

until crispy (or cooked on your ovens lowest setting)


Onion Dip

Portions Size: 1/4 cup
Servings: 14

Ingredients: 



  • 1/2 a medium sweet onion, grated with juice 
  • 8 ounces of pasture raised cream cheese (Let is sit out an hour before using)
  • ½ tsp dehydrated garlic
  • 2T Braggs Amino Acids
  • 16 oz of cultured cream


Directions:



  1. Using an electric mixer with beater attachments (or a whisk and a lot of endurance) beat the pasture-raised cream cheese until it is smooth, creamy and a uniform texture.
  2. Slowly incorporate cultured cream with the cream cheese until a smooth consistency is achieved.  
  3. Incorporate remaining ingredient on the lowest setting or stir by hand until all ingredients are evenly distributed.  
*Tip for the onion dip- any mini-chopper that has a puree setting can be used to prepare the onion instead of a grater.


Guacamole

Portion Size:  1/4 cup
Servings: 6 1/2

Ingredients:



  • 2-3 avocados
  • 1 lime, juiced
  • 1/2 tsp cumin
  • 3T fresh cilantro, minced
  • 2T minced sweet onion
  • 1T minced Jalapeno
  • Salt and Pepper to taste


Directions:



  1. Cut avocados in half lengthwise.  Use a spoon to scrape out the fruit, be sure to get the darker green area against the skin.  
  2. Smash avocados (a fork, potato smasher or pastry cutter all work).  
  3. Stir in Lime Juice until evenly distributed.  
  4. Add remaining ingredients and stir until evenly distributed.  DO NOT USE AN ELECTRIC MIXER! It will change the texture. 



Sprouted Grain Tortillas



Ingredients:

  • 1 Sprouted Grain Tortilla
  • 2 Tablespoons of Ghee
  • Seasonings of choice (salt, pepper, chipotle, garlic, thyme...)


Directions:

  1. Fold or cut tortilla to desired shape and place on a baking sheet. 
  2. Cook on 275 for 10 minutes, flip over cook for 5 minutes.  
  3. Brush one side with ghee, and sprinkle with desired seasoning.  Bake for 10 minutes.
  4. Flip tortilla over and brush with oil. Bake another 10 minutes or until crisp. Omit oil on second side for less oil on the chip. 

To test for crispness, let one cool and break.  They will last 3-4 days in a sealed container.

  1. This episode about how to convert common snack favorites to a fresh snack is wonderful and very informative. I love the idea of creating common snacks into a version where you know exactly what ingredients we are putting into them. And when most people think about eating healthier, they automatically assume they must switch from their favorite foods to foods that are not particularly their cup of tea and then resort back to their processed of the shelf food. As simple as knowing what is going into your food and if they are fresh and not overall processed is enough to maintain a healthy but also sustainable life. I am the type of person who also wants to eat fresher and healthier snacks but would assume I had to change my snack options to snacks I was not particularly fond of eating. I love the idea of making my own chips for the various of dip options. This is something I am going to start implementing in my kitchen.

  2. I am a snack person. I love to have eat snack everywhere I go and I especially like to snack on chips. I would always go to the supermarket to buy dips and chips to snack at home. My favorite dip is always the 7 layers dips, which is very rich in fat from the sour cream and the processed bean. When reading the title of this episode, I never could have imagined that making fresh snacks can actually be such a common food that is usually very unhealthy. I was very fascinated by the Muhammara recipe.I understand that nuts are very healthy for the body and the fact that Muhammara dip is made from walnut is just amazing. The dip itself is very nutritious with a great amount of healthy fat, nutrients and vitamins. The recipe of the onion dip was something new that I just learn as well. Since young, I was only taught about Greek yogurt being an alternative for sour cream. Now, I learned about the culture cream and it is great as it doesn't have a sour flavor like yogurt. It seems that the cultured cream is great for many cream sauces and I can see myself incorporating this cream into my future food dishes. Overall, this episode of Libby's Sustainable Kitchen have helped me learn that sustainable eating doesn't have to be eating non-tasty food, it only means eating food that contain more natural nutrients and less bad fat such as trans-fat as well as processed salt. Eating sustainability is simply picking fresh and natural ingredients and turning them into your favorite food. Dishes like chips and dips could be done the healthy way as well if you know how to substitute unhealthy ingredients with healthy ingredients.

    I loved this episode because I am always looking for a way to find new, fresh, healthy snack ideas to try during my day! I learned that I can probably still have the same snacks I enjoy now, but by making them with sustainable foods and in a sustainable way. One of my weaknesses is chips and onion dip and I never would have thought about making my own health and sustainable version at home. It was interesting to see it made with actual ingredients instead of just out of a jar or made with a powder!

    This episode was not only very useful to learn but very relatable. For what I mean about relatable, is that not everyone knows how to cook or even have the right setting to cook as well. For me personally, I juggle a job and school so just thinking about preparing an actual meal makes me exhausted just thinking about it. The recipes you listed are not only sustainable but really time efficient. Whenever i think of sustainable products it feels like it sounds so tricky to make sure everything is sustainable but after this video it has changed my mind and even made me intrigued to attempt to make these items. Also it makes me feel less guilty if i was to snack because all the items i would be eating are sustainable and healthy for myself as an individual.

  5. This episode not only demonstrated various snack alternatives to choose from, but also informed the audience the lack of nutrients and vitamins that us people don’t consume enough of. Usually when I eat chips and dip, I instantly regret it because I begin to feel guilty for my bad eating habits. However, this video is a perfect demonstration that people can still eat their favorites snacks and have it be healthy by simply being mindful of the ingredients that are being used. This is what a sustainable diet is all about. I also appreciate the various dip options that were included since chips and guacamole are my absolute fav!

  6. I thought this video was so informative and fun! I’m always looking for healthy easy snacks to make since I’m always on the go. My favorite was the guacamole recipe. I definitely need to try to make it at home. I’ve made my own chips before in the oven, but I am interested in making them with the sprouted grain tortilla you used. It looks delicious! I’m not the most experienced person in cooking, and this video is really approachable. It does not make me feel intimidated in any way. Sometimes other cooking channels can have that effect which prevents me from trying new recipes.
    I had no idea that the avocado that is closest to the skin has the most nutrients. I feel like that is the part that is left out the most, unfortunately. I will be on the lookout for ways to make my snacks healthier from now on. Thank you for sharing such a great video! I am excited to watch more!

    I am a snack person. All day, everyday snacks. If I am being honest my snack game isn't all that great. It was great to see how easy it is to make a few dips with such simple ingredients.
    I did learn in this video something new, red is a texture, who would have thought?
    I like purple potatoes and if it weren't for the picky family I live with then I would eat them more often.
    I don't like avocadoes, but now I should probably force myself to eat them because they are a great snack if you want to lose weight. Also it was cool to know that the darker green parts of the avocado are the most nutritious, most people just scrape away the top and leave the darker green.
    Also, I would not be into the quinoa patties, nope I'm sorry just not for me, tried quinoa and could not stomach it.
    Hopefully in the future when I do eventually move out and live alone I will adapt into a better life style for myself and learn to become for food sustainably conscious.

  8. This video was very entertaining and educational. I particularly want to try the Muhammara and the Onion Dip. I appreciated that you made delicious dips out of ingredients that are healthier. For example, the use of a cultured cream and purple quinoa for better nutrients and probiotics instead of regular sour cream or quinoa. I do enjoy snacking throughout the day so having these dips and veggie sticks available will he a nice healthy and refreshing snack. Most snacks are filled with hydrogenated oil as well as unhealthy levels of sugar, salt, chemical coloring, and flavors. Creating healthy dips and snacks with ingredients that are non-GMO and Organic can improve your health rather than manufactured snacks that provide empty calories.

  9. This is such an informative episode! I think an issue that a lot of people have with healthy eating is snack time. There are innumerable recipes for healthy breakfasts, lunches, and dinners, but then when it comes time for a snack, people are stuck reaching for the same bag of chips or cookies. The ideas given in this video sound delicious and easy to make and are so full of nutrients that they are sure to be satisfying and lead to long-term health. If they are made with organic, locally grown produce from small farms, they will also have a positive effect on the environment! I found it most interesting when Dr. Gustin explained that the onion dip can be made with cultured cream instead of sour cream, which will add probiotics that our guts need. Also, the guacamole looks delicious, and I will now make more of an effort to get all of the dark outer green part of the avocado so I am not throwing away phytonutrients. These snacks would make great additions to a football game or party, where most snacks are usually devoid of nutrients.

  10. This video is interesting and helpful episode. In fact, most of or videos that are related to culinary usually attractive me to like and subscribe on social media. Honestly, for most of college students, snacks are one of necessary things that cannot forget to have in our backpack at school, on the shelf at home or even anywhere we are going out. However, select to a “healthy” snack is not easy if we decide to buy them at supermarket. Dr. Gustin mentioned that they may be included in various unhealthy ingredients such as oil, salt, non-organic and GMO. That means that it could inhibit us from absorbing the things we might be eating with it that have nutrients. Therefore, I chose this episode to know more ways to make different fresh snacks by myself at home. I particularly want to practice working on Guacamole in this weekend based on Gustin’s ingredients and methods. Hopefully, if I may success, I would like to recommend this “secret” healthy snack recipe to my friends who are also addicted to have snacks every day.

  11. Leann G. HM370 Spring 2021 - Wow! All these recipes sound delicious! I’m not a huge fan of onion and avocado myself but these recipes sound amazing! And the homemade chips? And tortilla bowls? Yummy! I can’t wait to try these recipes at home. As a notorious snacker, I am pleased to find these healthier alternatives. Though they are not as quick to make as the packaged potato chips and cookies college students often frequent, they sure are much better for your health! If you think about it, the small sacrifice of time will be worth it in the long run. As they said in the video, "The fresher, the better!".

  12. I am a huge snack person! I love snacks, but usually eat unhealthy snacks. These are excellent recipes as my family consumes avocados, ghee, and onions regularly. Usually, I do not make snacks as I am too busy, but by eating these healthy choices, I can become more energized, my skin, hair, and nails will be better, my brain will be stronger, and my body will prevent problems. When I spend time on something, I usually think of investing time and not spending or wasting time. This is surely an investment for myself and those dependent on me. The Purple Quinoa Patties and Muhammara would not be my go-to or a recommendation, but seeing this video makes me want to try it out. All recipes are easy and worth it!

  14. Let us be honest, we eat processed snack foods because they are not only convenient but also because they taste good. Now in saying that, many snack foods that are processed are not good for you and you can see that by looking at the ingredients label and trying to pinpoint all of the unknown items on there like all the preservative chemicals. This video is great because it helps teach the viewer that you can make fresh yummy food that is not only good for you but also quick and easy to make. The great thing about making fresh snacks is that you are able to control the amount of fats, sugars and salt that goes into it. This is not only an investment into your body but also to the farmers that produce all of the produce you buy. This being said, if you choose to purchase from small business then you are helping contribute to sustaining the local ecosystem which is an investment into keeping our planet healthy. I think my go to recipes shown would have to be the onion dip and guacamole because look amazing and easy to make.

  15. As soon as I saw the title of this video, I had to click! I'm always looking for more ways to eat healthier snacks and this is really helpful because dips are some of my favorite! I've never heard of cultured cream for the onion dip and I definitely want to try that. Its really smart to grate the onion for the juices. I have typically just thrown it in a food processor but that method seems like a good trick! I actually did not know that purple and blue foods have more antioxidants. I wasn't aware that the color had anything to do with it thats interesting. Im definitely going to be trying out that chip recipe! Thanks for sharing Libby!

    I haven’t always been a snacker, but when I do snack, it’s a lot of high processed foods, salt and sugar. This episode made some really easy to follow recipes that I will definitely be trying out when I’m looking for something to munch on. I’ve been meaning to make something with quinoa and after watching this I have an idea of how I will be preparing it now. I loved seeing how you prepare your guacamole, I might have to add some cumin in mine to see how I like it! The guacamole I make is basically the same as your recipe except I don't add cumin and add diced tomatoes, I also don’t like adding salt because everything we eat with the guacamole already has salt (and my mother has high blood pressure so the less salt in our homemade food the better!). My approach to snacking will be very different from now on.

  17. Almost all of my snacks are unhealthy, which is why I clicked on this video when I saw the title “Fun Fresh Snacks”. I really love to eat avocado and through this Youtube video, I learned a more healthy avocado recipe which is guacamole. It is so cool and healthy to make snacks from fresh ingredients. It is important that everything comes from whole, less processed ingredients for me because unhealthy ingredients lead to so many diseases. What I learned from the video is that the snack we are having off the shelf, they are made with oils that are not fresh, the salts that are in them are processed and it could inhibit you from absorbing the things you might be eating with it that have nutrients. I will also make the onion dip and sprouted grain tortillas based on the video recipes.

  18. The only healthy snack I ever consume is either mixed nuts or fruit. All my other snacks are mostly junk food. For example, bag of chips, chocolate bars, or those granola bars that contain added sugars. In this episode, I learned a lot more about the benefits of avocados. When I tried the keto diet, I only knew that avocado is a healthy fat. But not that it contains more potassium than a banana and it boosts your metabolism. Usually my regular snacks make me even hungrier, so I would eat maybe another bag of chips and it contains too many calories. But these dips and quinoa patties look like they can fill you up and you don't have to worry about too many calories of unhealthy fats. Definitely using these recipes.

  19. I was drawn to the video since I've been looking for healthy snacks to replace bad ones. I'm altering my diet to make it healthier for my body. I truly appreciate how basic and simple these dishes are to prepare. Even though I like onions, I've never considered preparing an onion dip. In addition, I appreciate how nutritious and sustainable these dishes are. I value the advice you provided regarding avocados. I was unaware that the nicest part was the dark green portion right near to the peel. Though I've never tried them, I'm excited to create the Purple Quinoa Patties. I think these dishes will aid me in achieving my aim of eating healthier. I'll share these recipes with my family and friends.

  20. I have always been a huge snack person, but I've never been that good at coming up with snacks. Typically, when I was younger, I would just have premade snacks such as chips, granola bars, or other pre-made foods from the store because it was cheaper and quicker. Unfortunately, these options were also super unhealthy and lacking in the proper nutrients. Recently I have been trying to work on finding and creating healthier snacks that are cheap and easy to make and I've honestly found that I am starting to really like and crave the snacks that I have been making. I have also had a lot less cravings for the processed foods that I used to crave all the time which is awesome. This episode was so cool to watch as I absolutely love onion dip, but I've never made it. For some reason I thought it would be a lot harder and more complex, but this recipe was so easy to understand, and it looks quite affordable too. This totally inspires me to try making my own chips and dips soon! I also loved the information about the nutrients that all the different dips provide since this is another thing that I have been trying to think more about. Overall, I loved this, and I will definitely be watching more episodes for inspiration!

  21. I enjoyed watching this cooking video! I am a huge snacker, most days I usually just snack on things rather than having meals. I am barely home most days which is why I pack many snacks to keep me energized throughout the day. The snacks I have every day are; granola bar, apple sauce, and multi-grain organic chips. Although these snacks are not completely unhealthy, it is still not healthy enough. I know there are healthier options for snacks and this video provided new recipes. I liked how everything in this video is easy to access, and simple to make. Most days I am discouraged by the amount of time it takes to cook something which is why I end up snacking and forgetting to have a meal. These snacks are both healthy and fast which will benefit my health and way of eating.

    I agree with what you have written about this video. Like you, snacking is one of my favorite ways of eating. Ice cream is something I love eating however I have worked really hard to move to a healthier option. Lately I have been opting for smoothies with granola. The snacks in this video seem both filling and delicious which is why they are so appealing. Prioritizing one's health and diet is one of my main goals so this is definitely a great way yo start!

  23. I thought the video Libby made was amazing because she provided ways to be sustainable in the kitchen. I do love eating snacks throughout the day and Libby showed us many recipes that are fun fresh snacks. I loved that she showed us recipes for snacks using fresh ingredients that are better for us and the environment. The introduction of the video is very informative because she explains why fresh ingredients are important. I never thought about how I’m consuming lots of processed foods and I want to change the types of snacks I eat. I really enjoyed the recipe of the guacamole that Libby provided because it is one of my favorite dips. She talks about the benefits of avocados and I never knew about this information until this video! I like her idea of baking the tortillas in the oven rather than frying them in oil. Towards the end of the video, the presentation of the food made looked so delicious with all the colors on the plates. I would love to make my favorite snacks with fresh ingredients after watching this video. While volunteering at the Grow Beach garden, we planted seedlings and everything is fresh in the garden. I am planning on going to the weekly farmers market that ASI has every Tuesday to get fresh ingredients for snacks!
